Easy Baked Avocado and Egg – Recipe

This is a brilliant breakfast option for two. It’s easy to make. If needed the recipe can be double or triple. Avocado is not fattening. It contains healthy monounsaturated fats, soluble fiber, low carbs and is dense in nutrients. Avocado is one of the best foods you can eat if you want to lose weight.

Ingredients
Makes: 2
·         1 organic avocado cut in half, pit removed
·         1 egg
·         Himalayan salt
·         Pepper
·         Your favorite seasoning – I use Fajita Seasoning

Instructions
1. Preheat the oven to 400 degrees F.
2. Flip each avocado side over and slice off enough of the rounded skin so that it can sit flat when the fleshy side is up.
3. Place the avocados, fleshy side up, in a baking pan. Crack some salt into each hole.
4. Whisk the egg in a bowl; divide it between the avocado holes.
5. Sprinkle with salt, pepper and the seasoning of your choice.
6. Bake for 15 minutes, until the egg has fully set.

Eat with a spoon and enjoy!
