Raw Oatmeal Nuts Cookies - Recipe

Oatmeal raisin cookies are probably one of North America's favourite comfort foods. Unfortunately, most cookies bought at the grocery store are saturated with trans fats and include far too many ingredients (cookies that definitely break my real food eating rules).

This cookie recipe is easy to make, creates chewy cookies and is even great for hard-to-please children. They're perfect as a pack-able snack to beat that daily afternoon snack craving.

Just a little reminder about oats. It's best to soak oats before eating them for optimal digestion, so don't forget to do that before making up these cookies.

Makes 20 to 24 cookies

Ingredients:

3/4 cup oats
3/4 cup pecans
3/4 cup walnuts
10 soft dates, seeds removed
1/2 cup raisins (I am using less)
Few pcs of Baker’s unsweetened chocolate
4 tbsp pumpkin seeds
1 tsp cinnamon
1/8 tsp nutmeg

Instruction:
1.      Soak oats overnight completely submerged in water.
2.      Drain water from oats and pat dry.
3.      Place oats in a food processor with "S" blade until ground up.
4.      Remove the oats and add all the nuts into the food processor and grind until coarsely ground.
5.      Add the oats back to the food processor and combine with the nuts.
6.      Add the remaining ingredients slowly and process until they form a sticky texture, similar to cookie dough.
7.      Take a spoonful, roll into a ball and then flatten into a cookie shape.
8.      Place the cookies for several hours in fridge.  Flip them several times to dry evenly.
9.      When cookies are ready, melt the chocolate and sprinkle over cookies. When chocolate is wet decorate the cookies with pumpkin seeds.
10.  For longer storage freeze them.
